Sector: Retail, Leisure & Hospitality

Although a relatively new sector for the practice, Wellwood Leslie have gained a wealth of experience in the Retail, Leisure & Hospitality sector working with a number of clients across Scotland.

The variety of projects undertaken across the sector including food retail (restaurants, café’s, and bars, etc.), food and beverage production (breweries, distilleries, food preparation) and hospitality (hotels and bed & breakfast accommodation)

The sector is led by partner, Stephen McPhail, based in our Dundee office who has around 18 years of experience working on a variety of leisure and hospitality projects.

Stephen’s previous experience working with Forbes of Kingennie on the development of their leisure estate starting in 2006 with a mutli-use development for the alteration and extension to their reception centre, provision of new holiday lodges, creation of Kingennie Court, and construction of a new maze and 9-hole golf course.

In recent years Stephen has added to this leisure experience having completed the Angus Historical Park project at House of Dun for the National Trust for Scotland (NTS) and a wedding and performance venue, Rossie on the Earn, near Forgandenny, in rural Perthshire.

Stephen has also worked on various catering facilities including at Carnoustie Golf Links on The Rookery, a 150-seater bar and restaurant as part of Links House development project, Brassica, a 150-seater bar and restaurant for Tayone Ltd, and Annies Café, a new catering facility for the University of Abertay.

Gemma Sommerville, is an Associate based in our Glasgow office with over 20 years’ experience working within the sports and leisure sector. Clients included West Lothian Leisure, Edinburgh Leisure, and the UK Leisure Framework with Alliance Leisure.

Her extensive knowledge of the sector is demonstrated by repeat projects for key clientele. Gemma has delivered many successful projects to assist leisure trusts with constructing improved income generating spaces, these projects vary from small to large scale internal refurbishments and rationalisation of existing centres to small and large scale extensions.

She has been involved with a variety of leisure projects for a variety of clients which range from: private one off gym’s, schools sports projects, the MoD, driving ranges and private leisure clubs. Gemma skill set extends to assisting the clients with developing the brief, building the team to deliver the project and the delivery of the project through to completion. Her keen eye for detail and an aspiration for the completed project to exceed clients’ expectations is a key focus and driver.

Completing the team is Caroline Sutherland, Interior Lead at Wellwood Leslie who is based in our Glasgow office. Caroline has worked extensively in the hospitality and leisure sector and will support Stephen in the development of projects within the sector.
